Comfort Food: Swedish Meatballs


Meatball Ingredients


  • Oil Spray

  • 1 Egg

  • 1/4 Cup Cottage Cheese

  • 1/4 Cup Sour Cream

  • 1 teaspoon Allspice

  • 1/2 teaspoon Nutmeg

  • Pinch Ground Cloves

  • 1/2 teaspoon salt

  • 1 teaspoon White Pepper

  • 1 Tablespoon Worcestershire Sauce

  • 2 Cups Dried Bread Crumbs

  • 1 Pound Ground Pork or Beef

  • 1 Cup Onion, Finely Chopped

  • 1 Recipe Herb Sauce (see below)

  • 1 teaspoon Garlic


Directions For Meatballs


  1. Preheat oven to 375°. Spray broiler pan with oil

  2. In blender or food processor, combine egg, cottage cheese, sour cream, spices and Worcestershire Sauce

  3. Add meat and onion. Mix with hands and form into balls, about 1 1/2 inches

  4. Place on broiler pan and bake uncovered for 25 minutes. When done, serve with herb sauce


Fresh Herb Sauce Ingredients


  • 1/2 Cup Cottage Cheese or Sour Cream

  • 1 1/2 Cups Milk

  • 2 Tablespoons Butter

  • 3 Tablespoons Flour

  • 1 Tablespoon, each of chopped fresh Dill, Basil, Chives & Parsley

  • 1/2 teaspoon White Pepper

  • 1/2 teaspoon Salt


Directions For Fresh Herb Sauce


  1. Blend together cottage cheese or sour cream and milk until smooth (Use blender or whisk)

  2. Melt butter over medium heat. Stir in flour and cook for 1 minute. Add milk mixture a little at a time, stirring until smooth after each addition of milk mixture. Bring to boil, stirring until thickens. Remove from heat and add herbs and pepper. Stir well
