Comfort Food: Sea Bass With Onion, Capers & Lemon
Sea Bass Ingredients
3 tablespoons olive oil
1 large onion, halved lengthwise, then thinly sliced crosswise
3 tablespoons white wine
1/2 teaspoon black pepper
3 tablespoons unsalted butter
3 tablespoons capers (in brine), rinsed, drained, and coarsely chopped
2 1/2 tablespoons fresh lemon juice
4 6 ounce pieces sea bass filets with skin (1 1/2 to 2 inches thick, vein removed)
3/4 teaspoon salt
2 tablespoons chopped fresh flat-leaf parsley
Directions For Sea Bass
Heat 2 tablespoons oil in a large heavy skillet over moderately high heat until hot. Saute onion, stirring frequently, until golden, about 6 minutes
Stir in white wine and 1/4 teaspoon pepper and cook, stirring, until onion is softened, about 1 minute. Stir in butter until melted, then stir in capers and lemon juice. Remove from pan and keep warm
In same pan cook sea bass, adding remaining oil and sprinkle with salt and pepper. Cook skin side up first for about 3 minutes, then flip onto other side and cook 6-8 minutes.
